Our Process
How is your bread made?
All of our bread is made in small batches using traditional methods. We focus on time, fermentation, and technique rather than shortcuts. All of our products are made with freshly milled flour, mixed gently, rested properly, and baked for flavor and structure—not speed.
What does “fresh milled flour” mean?
Fresh milled flour is grain that we mill shortly before baking. This keeps the bran, germ, and endosperm intact, resulting in better flavor, aroma, and nutritional integrity than shelf-stable flour.
Do you use sourdough?
Yes. Many of our breads are naturally leavened using a sourdough starter. We also make select items with yeast when it best suits the product. Either way, fermentation is a key part of our process.
Why does your bread look and taste different each time?
That’s the nature of real bread. Fresh flour, seasonal grain variations, fermentation, and weather all influence the final loaf. We aim for consistency in quality—not uniformity at the expense of character.
Our Ingredients
What ingredients do you use?
We prioritize simple, recognizable ingredients, including:
- Freshly milled whole grains
- Flour, water, salt
- Natural leavening (sourdough or yeast)
- Butter, oils, eggs, dairy, honey, or sugar when appropriate
We avoid unnecessary additives whenever possible.
Do you use preservatives?
No. We do not use chemical preservatives or bleaching agents of any kind. Our products rely on fermentation, technique, and fresh ingredients for structure and shelf life.
Do you offer gluten-free products?
While we occasionally use some naturally gluten-free grains, our bakery is not gluten-free, and cross-contact is possible. We cannot guarantee products are safe for those with celiac disease. However, we have a large component of our customer base who eat gluten-free elsewhere but can eat our products without the side effects of other grain-based foods. The secret is the fresh-milled flour and its purity – no bleaching and no additives.
Do you use “natural” ingredients?
Yes. We focus on whole, minimally processed ingredients and traditional baking methods. Fresh milled flour allows us to rely less on additives because the grain itself provides flavor and structure.

How should I store your bread?
Our bread is best enjoyed fresh. For longer storage:

- Freeze for longer storage
- Avoid refrigeration, which dries bread out
